EASY! Homemade Crepes Suzette (Elegant Dessert)

Crepes Suzette is one of the most elegant & famous French crepe desserts. Crepes are served in a delicious orange sauce. According to the legend, the origin of this classic dessert is a result of a mistake. It was, without doubt, a delicious mistake! (You can read the full story on Wikipedia).

In restaurants, Crepes Suzette is finished at the table in a chafing dish in full view of the guests. This way, guests can see the performance of the flambéing of the sauce. {Flambé is a cooking procedure in which alcohol is added to a hot pan to create a burst of flames. The word means “flamed” in French.}

Crepes Suzette; a simplified version

Crepes Suzette is one of those classic desserts that may seem difficult to make at home. But, you can make it easily at home without the flambé part. You just need a few crepes and orange butter sauce.

Plan-ahead & make-ahead

You can make the crepe batter, crepes, and orange butter sauce (Suzette Sauce) in advance. Then, keep them in the refrigerator. You can also use store-bought frozen crepes.

Once your crepes and the sauce are ready, you can easily assemble the Crepe Suzette in no time. Just heat the crepes in the sauce and bring them to the table! Yes, that’s simple.

How to Make the Orange Butter Sauce?

This is a delicious sweet orange sauce. It is also great on ice cream and anything else you want to put it on. Making some extra sauce is worth it.

You can make the orange sauce in advance. Then cover it tightly and store it in the refrigerator for a few days. The orange sauce will be runny while warm but thicken as it cools. Be sure to warm the sauce up for a few seconds before use as needed.

The sauce is made of caramel, citrus juice (orange and lemon), and zest. In this recipe, I used fresh-squeezed orange/lemon juice and zest in the sauce. Orange and lemon zest add a nice flavor and aroma to the orange source.

Store-bought orange juice is a convenient alternative to fresh juice but contains added preservatives and a lot of sugar. So be sure to adjust the sweetness of the sauce if using store-bought orange juice.

Typically, Grand Marnier (an orange-flavored liqueur) is used. But, I have used other kinds of orange-flavored liqueur and brandy in my orange sauce. If you don’t want to use alcohol in your sauce, you can make a non-alcoholic version of orange sauce. You don’t need to add any alcohol.

Make sure to keep your eyes on the mixture when caramelizing the sugar. It will turn from white to light golden to dark amber within a few minutes. So, it is important not to leave your saucepan unattended.

How to make the Crepes?

You can cook your crepes just before you assemble the Crepes Suzette. Alternatively, you can make crepes in advance and keep them in the refrigerator. Warm them just before you assemble your Crepes Suzette. Crepes are best eaten straight from the pan, so I like to make crepes just before assembling my Crepes Suzette.

Making Crepe Batter In a bowl with a wire whisk

Alternatively, you can make the batter in a bowl with a wire whisk or electric hand mixer. Here is a detailed recipe. It includes an easy-to-follow step-by-step guide with photos. You will learn how to make basic crepe batter in a bowl. It also shows how to cook crepes in a frying pan.

Homemade Crepes Suzette

Ingredients

  • 4 crepes homemade or store-bought
  • 100 g sugar
  • 2 tbsp water
  • 200 ml orange juice
  • 1 tbsp lemon juice
  • Zest of 1 orange & lemon
  • 100 g unsalted butter
  • 1 tbsp orange liqueur optional
  • 1 tbsp brandy optional
  • Ice cream & orange segments for serving

Instructions

Make the Crepes

Make the Sauce

  • Place the sugar in a thick-based frying pan and place over a medium heat. Add 2 tablespoons of water.
  • After a few minutes, the sugar will start turning into a caramel. Continue cooking until sugar is light to medium amber, a minute more. Do not stir and be careful not to burn.
  • When it turns white to amber color, stir until sugar is completely dissolved into an amber-colored liquid.
  • Add the orange and lemon juice and zest and stir well.
  • Add the butter cut into cubes. Stir well until butter is completely melted and the sauce is bubbling and thicken for about 1 minute.
  • Stir in the Grand Marnier or your choice of liqueur, if using, then heat for a few seconds and lower the heat. Remove from the heat.

Assemble

  • Once the crepes and sauce are made, assemble the Crepe Suzette. Warm your crepes, the sauce and the plate.
  • Warm a pan over low medium and place the crepe in the pan and allow to heat both sides for few seconds. Then fold the crepe in half. And fold again to form a triangle.
  • Heat the sauce and dip the crepe into the hot orange sauce using a tong. Flip it over to cover both sides with sauce. Repeat with the remaining crepes and sauce. Make sure the sauce covers the crêpes.

Serve and Enjoy!

  • Place the crepes onto warmed serving plates. Pour some sauce over the crepes on the plates. Spoon a little of the remaining sauce over each serving. Top the crepes with a scoop of vanilla ice cream and drizzle more sauce over the top of the crepes. Garnish the crepes with orange sections if desired. Serve immediately. ENJOY!
