Rinse sweet potatoes under running water and scrub off any loose dirt.
Cut into sticks, like French Fries.
Soak in water for 5 to 10 minutes.
Wash few times and the drain.
Dry well with paper towel.
Spread them on a paper towel.
Let them dry naturally for one to two hours.
Put oil in a pan and add sweet potatoes into the cold oil.
Turn on the heat to medium and fry until crispy.
Take the sweet potato fries out and drain on paper towel.
Make the syrup by mixing the sugar and water in a saucepan.
Cook over medium-high heat, until it turns to a syrup consistency.
Turn heat off and add the fries and sesame into the syrup.
Mix well until the sugar mixture crystallizes around the potatoes.
