Ingredients

  • 3 large eggs
  • 1 small onion finely chopped
  • 6 to 8 curry leaves finely chopped
  • 1 green chili finely chopped
  • 1 red chili finely chopped, optional
  • 1/4 teaspoon chili powder optional
  • Salt & pepper to taste
  • 1 tablespoon cooking oil

Instructions

  • Chop the onion, chilies, and curry leaves.
  • Beat the eggs in a large bowl.
  • To the bowl of beaten eggs, add the chopped onion, chilies, curry leaves, salt, pepper, and chili powder. Mix well.
  • Cover and rest the mixture for about 10 minutes.
  • Heat the oil in a large nonstick frying pan over medium-high heat. When hot, pour in the omelet mixture. Give it a quick swirl making sure to distribute it evenly across the pan.
  • Cook for a minute on medium heat till it sets. Cover the pan with a lid to speed up the process. Cook, uncovered, for a further minute until the edges are slightly crisp and the bottom is lightly browned.
  • Heat the oil in a large nonstick frying pan over medium-high heat. When hot, pour in the omelet mixture. Give it a quick swirl making sure to distribute it evenly across the pan.
  • Cook for a minute on medium heat till it sets. Cover the pan with a lid to speed up the process. Cook, uncovered, for a further minute until the edges are slightly crisp and the bottom is lightly browned.
  • Serve it by cutting it into triangles just like you cut a pizza!
