Chop the onion, chilies, and curry leaves.
Beat the eggs in a large bowl.
To the bowl of beaten eggs, add the chopped onion, chilies, curry leaves, salt, pepper, and chili powder. Mix well.
Cover and rest the mixture for about 10 minutes.
Heat the oil in a large nonstick frying pan over medium-high heat. When hot, pour in the omelet mixture. Give it a quick swirl making sure to distribute it evenly across the pan.
Cook for a minute on medium heat till it sets. Cover the pan with a lid to speed up the process. Cook, uncovered, for a further minute until the edges are slightly crisp and the bottom is lightly browned.
