How to Make Caramelized Apple Pancake

This baked puffy pancake (oven apple pancake) isloaded with caramelized apples spiced with cinnamon, a perfect breakfast treat. You can serve it just plain or as a dessert withice cream.

Ingredients

For caramelized apples

  • 2 tablespoons butter
  • 3 tablespoons brown sugar or white
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 apples peeled and chopped

For the batter

  • 3 large eggs at room temperature
  • 100 ml milk at room temperature
  • 2 tablespoons yogurt at room temperature
  • 60 g all-purpose flour or plain flour
  • 2 tablespoons butter for baking

Instructions

Make the Caramelized Apple

  • Melt the butter in a pan over medium heat.
  • Add sugar and mix well until butter and sugar dissolves.
  • Add the apples and cook, stirring often, for about 5 minutes or until apples are tender. Season with salt.
  • Sprinkle with cinnamon and cook for another 2 or 3 minutes, frequently tossing, until the apples are coated.
  • Remove from the heat. Caramelized apple is ready!

Make the Batter & Bake

  • Preheat the oven to 210 degrees Celsius.
  • In a blender, blend the eggs, milk, yogurt, flour, and salt until you have a smooth batter. Alternatively, make the batter in a bowl with a whisk.
  • Place a skillet or oven-safe pan in the preheated oven for about 10 minutes until it is very hot.
  • Remove from the oven and add the butter to the skillet/pan, swirling to coat the bottom and sides.
  • Add the caramelized apples to the pan and then, pour the batter on the top of the apples.
  • Bake for 18 to 20 minutes, until the pancake is puffed, the edges are golden brown and the center is set. Remove from the oven
  • Serve warm or cold. Enjoy
